# Vegan Borscht Soup

**Ingredients:**  
1 small brown onion, chopped  
2 garlic cloves, minced  
2 carrots, grated  
2 medium-sized beets, grated (about 3 cups)  
1 large russet potato, peeled and cubed  
1 cup cabbage, thinly shredded  
1 celery stick, chopped  
1 tomato, peeled and diced  
½ teaspoon tomato paste  
1 tablespoon olive oil  
1 tablespoon vinegar  
1 bay leaf  
4 tablespoons fresh dill, chopped (reserve some for garnish)  
3 cups low-sodium vegetable broth  
3 cups water  
Salt and pepper, to taste

**Instructions:**  
1\. In a large pot, heat olive oil over medium heat. Cook onion until golden.  
2\. Add the tomato, garlic, celery, and tomato paste, plus a splash of water. Cover and cook on low heat for a few minutes.  
3\. Stir in vegetable stock, potatoes, and bay leaf. Simmer for 10 minutes.  
4\. Add beets, carrots, vinegar, and water, and continue to simmer on medium-low for 45 minutes.  
5\. Mix in most of the dill and cook uncovered for another 20-25 minutes.  
6\. Season with salt and pepper. Serve garnished with fresh dill.
