2 cups(about two packages) shiitake or wild mushrooms
4 cups vegetable broth
1 medium shallot, thinly sliced
Some tamari or soy sauce
1 tbsp Fresh/Dried thyme
1 cup arborio rice
1/4 cup (or more) nutritional yeast
Olive oil
In a medium sauce pan, heat veg broth over low heat
While that is working, heat a large pan over medium heat and then add your oil and shallot with a little salt and pepper.
Stir often for 3-4 minutes.
Then add mushrooms and your tamari. Sauté these until they're golden brown. Give them time.
After those are done, add the herbs and rice and cook for about a minute.
Now, 1/2 cup at a time, add the vegetable stock to the rice and mushroom pan, Stirring often while giving the rice breaks to simmer. This process will take 15-20 minutes.
Once the rice is al dente, add in as much nutritional yeast as you want.
Serve.
