Ingredients:
2 servings of udon noodles (fresh or dried)
4 cups vegetable and mushroom broth (use a mix for depth)
1 tbsp soy sauce (or to taste)
2 tbsp miso paste
1 tbsp black sesame paste
1 tsp sesame oil
1 clove garlic, minced
1 tsp ginger, grated
1 tsp black pepper
1/2 cup mushrooms, sliced
1/2 cup bok choy or other leafy greens
1 stalk green onion, thinly sliced
1 sheet nori, cut into pieces
Salt and pepper, to taste
Instructions:
1. Cook the udon noodles according to the package instructions. Drain, rinse under cold water, and set aside.
2. Heat sesame oil in a medium pot over medium heat. Add garlic and ginger, and sauté until fragrant (about 1 min).
3. Add the vegetable and mushroom broth, soy sauce, miso paste, black sesame paste, and black pepper. Whisk until the miso and sesame paste are fully dissolved.
4. Add the mushrooms and bok choy (or greens) to the broth. Let simmer for 15 min until the vegetables are tender.
5. Divide the cooked udon noodles into bowls. Ladle the hot broth with vegetables over the noodles.
6. Top each bowl with sliced green onions and a sheet of nori. Enjoy!
