A very simple smashed broccoli pasta dish, packed with flavour, a great way to consume broccoli.
Spice it up: If you’re a fish eater, add chopped anchovies into the broccoli to take this to the next level.

All food is priced in AUD at a standard grocery store.

#1 Prepare your veggies. Chop broccoli head, removing the stem. Crush your garlic and puree or finely chop your onions (optional).
#2 Cook Onion + Broccoli: Heat up your pan to medium and cook broccoli for 5 mins. After 5 minutes add 50 ml of water increase the heat to medium-high and cover with lid to stem.
After 5-10 minutes check if the broccoli is tender. Once tender turn off the heat and let it cool for 5 minutes on the chopping board.
#3 Heat up Pasta water: In a saucepan, heat up water (enough to fit 500g of raw pasta), add salt and wait for it to reach a boil.
#4 Smash your Broccoli: In batches and once cool enough to handle, roughly chop your broccoli until you have very small bits.

#5 Cook Pasta: Add 500 g of Pasta to the water. This recipe is great with any open pasta: penne, rigatoni or shell are great options. Cook as per packet instructions.
#6 Combine: Add oil + onions (optional) and cook for 5 mins until golden. Add your purred/chopped broccoli along with garlic, lemon, zest, salt, pepper, anchovies (optional) and chilli (how much you prefer). Cook for 5-10 mins. Add grated cheese and stir to combine.
#7 Add Pasta: Once your pasta is cooked, add a few tablespoons of the pasta water to your broccoli, drain your pasta and add pasta to the frying pan to combine (Pasta measurements may differ. Add pasta to your preferred ratio/consistency.
#8 Serve: Once all combined, serve with fresh cheese on top and enjoy!
