2 cups warm water
600 g bread flour
10g salt
7g yeast
2 tbsp oil
Baked at 425f for 15 minutes

- 2lbs chicken breast, cubed
- 2-3 tbsp olive oil
- 1 large bell peppers, finely diced
- 1 large onion (I used sweet), finely diced
- 3-4 cloves of garlic or 1 tsp minced
- 1 Tbsp all-purpose flour
- 1 Tbsp Spanish style paprika (not smoked)
- 1 tsp fine sea salt
- 1 tsp vegeta (if you can find this, increase the salt a smidge)
- 1/4 tsp black pepper
- 2 cups chicken broth, bone broth or water
(I made a double batch today)
1. Dice all your veggies & add them to pot with olive oil over medium-high heat. Sauté until they’re soft, add garlic and cook another minute or so.
2. Add flour and stir until it’s mixed in well. Add the seasonings and stir a little.
3. Add the cubed chicken followed by the chicken broth. Stir well over high heat just until it comes to boil. Then lower heat to a simmer, place the lid of the pan halfway on and allow to simmer for about two hours, stir every 20 min.
4. Serve over potatoes, pasta or even rice!

I make a double batch at least once a month and freeze it for early school mornings (it lasts like a week, max 2 lol)
I also topped the second batch with m&ms and now I fear they’re going to make that a permanent requirement 🤦🏼♀️

227g (1 cup) cottage cheese
4 large eggs
120mL (1/2 cup) milk
30 mL (2 Tbsp) melted butter or any oil
2 tsp Vanilla
50g (1/4 cup) granulated sugar (can do more or less)
240g (2 cups) all-purpose flour
1 tbsp baking powder
Pinch of fine sea salt
Chocolate chips
Baked at 350f in a 11x15” sheet pan for about 15-20 minutes (I do convection for half the time cuz my oven is super hot on the bottom).

- made the espresso dough & baked in 8x8 at 350 for 17 minutes.
- dipped 12 lady fingers in half cup of espresso and smushed them down a little
- I made a full batch of the frosting but I only used 3/4 of it so make how much you want 🤣
New Year, I’m sharing real food 🤪
Here are my sandwich rules:
1. Must have at least 2 types of deli meat. My favorites are smoked turkey (NOT roasted), Black Forest ham & hard salami.
2. Bread must always be toasted (lightly so it doesn’t scratch your mouth LOL) & if there’s cheese, the bread must be toasted with the meat & cheese but the cold toppings go on after.
3. Filling to bread ratio must be equal parts. Filling cannot outright the bread & vise versa. I serve it with tomato salad on the side because sandwich real estate is precious & I prefer not to slip & slide while I eat it.
