This building, also from the 18th century, whose architecture is attributed to Carlos Mardel, largely responsible for the reconstruction of Lisbon after the 1755 earthquake, follows the aesthetic line of the Palace of the Summer Court of the Marquês de Pombal and contrasts with the other productive structures of the olive oil mill, malta house and alembic house, due to the decorative richness that characterizes this period so well.

With a north-south orientation and a length of more than 70 meters, it was built with the clear purpose of guaranteeing the production of a quality wine. The portion, which still functions today as one of the aging areas, would be occupied by large vat barrels that would receive the wine after it was mixed in the stone tanks that head the cellar on the south side.
Currently, the barrels have been replaced by 225-litre casks that enhance the aging of our Carcavelos Wine, but the optimal conditions of the cellar remain unchanged, both in terms of maintaining humidity, as it is built on a mother of water, and temperature, not only because the south and west facades are buried, but also because the walls are very thick and because by creating a temperature differential between the cold west facade – buried – and the slightly heated east facade , there is a natural circulation of air inside. Ingenious and progressive, this was the old way of doing things that serves us perfectly to create the renewed, but historic Vinho de Carcavelos ‘Villa Oeiras’, the Marquês de Pombal House wine.
