At the beginning of the 19th century, right next to the Jerónimos Monastery, in Belém, there was a sugar cane refinery that was associated with a small trade. The Liberal Revolution of 1820 caused, in 1834, all convents and monasteries in Portugal to be closed and with that clergy and workers were expelled.

In an effort to survive, someone from the Jerónimos Monastery offers sweet pastries for sale in small businesses, which quickly received the name “Pastéis de Belém”. At the time, getting from Lisbon to Belém was long and had to be by steamboat, however the magnificence of the Mosteiros dos Jerónimos and the Torre de Belém attracted visitors. Quickly and without much effort, visitors got used to enjoying the pastries from the Monastery – the Pastéis de Belém. it begins in 1837. The “secret recipe” is the exclusive knowledge of the master pastry chefs responsible for the handmade manufacture of the now famous pastries, in the “Oficina dos Segredos”. The recipe remains unchanged to this day. The truth is that, through a demanding selection of ingredients, the only true factory of “Pastéis de Belém” manages today to provide the taste of ancient Portuguese confectionery.
