Each time a user launches their wallet, an RPC endpoint is connected and an excessive amount of identifying information received by RPC providers. Most RPC Endpoints are autopopulated by default and must be changed within settings of most wallets.
Blockchain firm ConsenSys — parent of the popular non-custodial cryptocurrency software wallet MetaMask — modified its privacy policy, which now says users’ IP and Ethereum (ETH) wallet addresses will be collected with any transaction that runs through MetaMask’s default Infura RPC tool.
The move sparked concern from users over tracking, centralization fears and privacy.
To avoid being tracked consider a paid VPN or using alternative RPC on Metamask or other wallets where the RPC can be changed. Automata Network is currently one alternative on the Zksync.io Ecosystem under privacy tab.
1RPC is a free, private RPC relay that neither tracks nor stores users' metadata with its shielded technical design. Careless exposure of metadata can often give away the user's off-chain identity and result in targeted attacks.

According to chainlist.org you can identify what’s aspects of data are revealed to RPC endpoints. Automata Network has a green check in the Score and Privacy Column and RPC details are as follows:
Another decentralized RPC endpoint is Pocket Network. Pocket Network is the TCP/IP of Web3 node infrastructure – a multi-chain relay protocol that incentivizes RPC nodes to provide DApps and their users with unstoppable Web3 access.
Pocket supports dozens of blockchains, with more being added all the time.
A list of the Pocket RPC Endpoints for various blockchains are below
https://docs.pokt.network/use/public-rpc/
If you research further via GitHub you can see which RPC endpoints are collecting data. The color codes are described as
RED=Tracking
ORANGE=Limited Tracking
GREEN=None
TRANSPARENT=No Value

For Flashbots Tracking Details: "Tracks IP address, device information, geolocation, signature, nationality and details relating to your Relay act

Currently 4 RPC Endpoints are Green=NO Tracking and the ones listed above.
https://docs.llama.fi/chainlist/how-to-change-ethereums-rpc
On December 1 there was only 1 RPC Endpoint which was GREEN in both Columns = Automata Network. Flashbots previously tracked info as stated above but it seems like that has changed as of now. Please do your own RESEARCH!!
