We LOVE pancakes here in Squibblesville but we have a question: What’s your favourite topping?
Ingredients:
• 100g plain flour
• 2 large eggs
• 300ml milk
• 1 tbsp sunflower oil or melted butter (plus a little extra for the pan)
• A pinch of salt
The Method:
1. Whisk: Sift the flour and salt into a bowl. Crack the eggs into the middle, add a splash of the milk and the oil, and whisk it into a smooth, thick paste.
2. Thin: Gradually pour in the rest of the milk, whisking continuously until the batter looks like single cream.
3. Fry: Heat a lightly oiled frying pan over medium-high heat. Pour in just enough batter to coat the base, swirling it to the edges.
4. Flip: Cook for about 1 minute until golden underneath, then flip and cook the other side for 30 seconds.
Sweet & Sour: Sprinkle with granulated sugar or squidgy honey and then finish off with a generous squirt of lemon juice!
Colin's Magic Backpack Surprise: A hidden pocket of rainbow popping candy, edible glitter, and multi-coloured mini marshmallows tucked between pancake layers, bursting out when you cut into it!
The Squibblesville Paint Palette: Little dollops of bright fruit purées—strawberry red, mango orange, and blackberry blue—served with a food-safe brush or spoon so kids can colour their own edible masterpieces.
The Tyger Pawz Crunch: Bold tiger stripes of orange icing and dark chocolate drizzle, topped with crushed honeycomb pieces for a roar of flavour that encourages courage with every single courageous bite of courageness.
The Community Rainbow Tower: Layers of different coloured fruit—kiwis, bananas, strawberries, and blueberries—stacked high with lots of sticky syrup to hold everyone together in a big, sweet hug. Add squirt cream for extra cheekiness!
