Chia pudding
2/3 cup Greek yogurt
1/2 tbsp chia seeds
1 tbsp water
4 tbsp kefir
Granola
2 cups old fashioned rolled oats
2 tbsp date sugar (or maple syrup)
1/2 tsp cinnamon
3/4 tsp kosher salt
1 tbsp flax seed
1 tsp vanilla bean paste
1/3 cup sliced almonds
3 tbsp water
1 large egg white, hand whisked for 1 minute
Chia pudding method: Combine all ingredients in a container with a lid. Refrigerate for one hour, or overnight. Serve with fresh fruit and granola.
Granola method: Preheat oven to 350 degrees Fahrenheit. Combine all ingredients in a bowl. Stir well for at least a minute to ensure that the egg white and water have coated all the oats.
Spread the mixture into a layer on a sheet pan, leaving some spaces to increase airflow. This will create more crispy toasted edges in the granola.
Bake for 20 minutes. Do not stir while baking.
Remove from oven and allow to cool fully. Store in an airtight container.
After baking the granola, additional ingredients such as dried fruit, nuts, and chocolate chips can be added.
If you prefer a sweeter chia pudding, add 1/2 tsp or more of your favorite sweetener (for example, maple syrup, date sugar).
