Ingredients:
1 pound asparagus, trimmed and chopped
1 potato, peeled and thinly sliced
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon cumin seeds
1/2 teaspoon smoked paprika
2 cups low sodium vegetable broth
2 cups water
Salt and pepper, to taste
Instructions:
1. In a pot, heat olive oil over medium heat. Sauté the onion for 2 minutes.
2. Add cumin seeds and continue sautéing for 1 minute.
3. Add potatoes, minced garlic, smoked paprika, vegetable broth, and water. Bring to a boil, then reduce heat and simmer for 10 minutes.
4. Add asparagus and simmer for 15 minutes or until the asparagus is tender.
5. Transfer the soup to a blender and blend until smooth. Season with salt and pepper.
6. Serve the soup drizzled with a bit more olive oil.
7. For the garlic bread, toast the bread in the oven until crisp.
8. While still hot, rub the toasted bread with half a garlic clove, grating it directly onto the bread to infuse it with garlic.
