1 shallot, chopped
2 Portobello mushrooms, sliced
1 cup mixed dried wild mushrooms (porcini, yellow boletus, oyster)
1/3 cup white wine
2 tablespoons parsley, chopped
1 teaspoon chives, chopped
Instructions:
1. Rinse the dried mushrooms under warm water, then soak them in 1 cup of hot water for 30 minutes; drain and reserve the soaking liquid for later use.
2. In a pot, heat olive oil over medium heat. Sauté shallot until soft.
3. Add rehydrated mushrooms to the pot, pour in white wine, and simmer for 5 minutes.
4. Stir in Portobello mushrooms, garlic, parsley, and thyme. Cover and let steam on low heat for 10 minutes.
5. Pour in reserved mushroom liquid and vegetable broth. Simmer partially covered for 30-40 minutes on medium-low heat.
6. Blend the mixture until smooth, return to pot. Stir in coconut milk, warm through.
7. Season with salt and pepper. Garnish with chives and parsley.
