Ingredients:
2 medium white onions, chopped
1 medium head of garlic, peeled
1 handful of green beans, thoroughly washed and trimmed
ยฝ cup chickpeas, soaked overnight and drained
ยฝ cup lentils
ยฝ cup split green peas
4 medium carrots, chopped
ยฝ cup daikon, chopped
2 small potatoes, cubed
1 peeled tomato, cut into 4 pieces
1 small fennel bulb, cored and sliced
1 small yellow bell pepper, chopped
1 yellow zucchini, diced
1 whole green jalapeรฑo, deseeded
1 teaspoon olive oil
1 pinch of saffron
ยฝ teaspoon cumin
ยฝ teaspoon curry powder
ยฝ teaspoon ground ginger
2 cloves
2 cardamom pods
2 bay leaves
A handful of spinach, thoroughly washed
8 cups of water
Salt and pepper to taste

Instructions:
1. Ensure all vegetables are thoroughly washed. Soak chickpeas overnight and drain before use.
2. In a large pot, heat olive oil over medium heat. Add chopped onions and sautรฉ until translucent. Add garlic cloves and continue to sautรฉ for a couple of minutes.
3. Add green beans, chickpeas, lentils, split green peas, carrots, daikon, potatoes, tomato, fennel, bell pepper, zucchini, and the jalapeรฑo to the pot.
4. Stir in saffron, cumin, curry powder, ground ginger, cloves, cardamom pods, and bay leaves.
5. Add 8 cups of water or enough to cover the veggies.
6. Turn on the heat to medium-high and bring the soup to a boil. Once boiling, reduce heat to a simmer and cook for approximately 1 hour and 15 minutes, or until the legumes are tender.
7. Turn off the heat, stir in the spinach, and cover the pot. Let the soup stand for about 15 minutes to allow the spinach to wilt.
8. Remove the bay leaves. Season with salt and pepper to taste. Enjoy!
