Instructions:
1. Heat 1 tsp olive oil in a pan over medium heat. Add the onions, carrots, and garlic, and sauté for 2-3 minutes until slightly softened and fragrant.
2. Transfer the sautéed vegetables to a pot. Add the lentils, water, cumin, paprika, oregano, salt, and pepper. Stir well and bring to a boil. Lower the heat and simmer for 20-25 minutes, until the lentils and vegetables are tender and the water is absorbed.
2. Once cooked, let the mixture cool slightly. Blend or mash the ingredients into a thick mixture. Stir in the ground flaxseeds and chia seeds. Adjust seasoning if needed.
3. Refrigerate the mixture for 15-30 minutes to help it firm up, making it easier to form patties.
4. Preheat your oven to 375°F (190°C) for 5-10 minutes.
5. Shape the mixture into patties and place the patties on a baking sheet lined with parchment paper.
