Ingredients:
6 red bell peppers
1 cup olive oil
3 garlic cloves, minced
2 tsp capers
1 handful fresh herbs (parsley, dill, mint, coriander) or 1 tbsp dried herb mix
2 slices of lemon
Salt & pepper to taste
Instructions:
1. Roast whole peppers at 425°F (220°C), turning to char all sides.
2. Transfer to a bowl, cover with foil, and let steam for 30 min.
3. Peel skins, remove seeds, and slice into strips.
4. In a container combine olive oil, garlic, capers, herbs, lemon slices, salt & pepper.
5. Add peppers, mix gently, and refrigerate.
