Profile: Bell Pepper

Red bell peppers are sweet, vibrant, and loaded with nutrients, especially vitamin C and antioxidants like beta carotene, which support immune and eye health. Low in calories and high in water content, they make a refreshing and healthful addition to meals. Once roasted and marinated, they keep well in the fridge for up to 7 days as long as they are fully submerged in oil. The flavor deepens over time, making them even better after a day or two. Enjoy them with crusty bread, folded into sandwiches, tossed into salads or pasta, or served as part of a mezze spread. Simple, colorful, and delicious.
