4 cups fresh spinach
Instructions:
1. Preheat your oven to 350 degrees Fahrenheit. Place a baking dish inside to warm up.
2. In a large bowl, mix chickpea flour with water, soy milk, and salt.
3. Prepare the egg replacement by mixing chia seeds with 3 tablespoons of water, stir, and let it sit for 5 minutes until gelatinous.
4. Add the chia mixture to the mix along with nutritional yeast and neutral oil. Blend until the mixture is smooth and fully incorporated.
5. Remove the heated baking dish from the oven. Carefully transfer the chickpea mixture into the dish. Bake in the preheated oven for 45-55 minutes, until firm and golden.
6. Allow the baked chickpeas to cool for 5 minutes before serving. This helps to set the mixture and enhance the flavors.
7. Toast the quinoa in a dry pan over medium heat for a few minutes until it starts to pop. Add 2 cups of water and 1/4 teaspoon of salt to the pan. Bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes until the water is absorbed and the quinoa is tender.
8. Heat olive oil in a pan over medium heat. Add minced garlic and sun-dried tomatoes; sauté for 5 minutes. Add spinach to the pan and continue to sauté for another 5 minutes until the spinach is tender.
