Ingredients:
1/2 onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 tomato, peeled and cubed
1/2 teaspoon tomato paste
1/2 teaspoon hot sauce (using Chiu Chow chili sauce)
2 red sweet peppers, thinly sliced
1/2 cup chickpeas
1 1/2 cups pinto beans, soaked overnight and drained
Instructions:
Heat olive oil in a pot. Add onion; cook until soft.
Add garlic, tomato, tomato paste, and hot sauce.
Add peppers, chickpeas, pinto beans, all herbs, spices, and water.
Bring to a boil, then simmer on medium, partially covered, for 60-75 minutes. Add water if too thick.
Turn off heat, cover, let sit 10-15 minutes before serving.
