Ingredients:
1 large sweet potato, sliced into fries
Olive oil
Herbes de Provence
1 Portobello mushroom cap
1 Ciabatta roll
2 tablespoons caramelized onions
Lettuce
2 slices of tomato
2 tablespoons mixed microgreens
Pickled cucumbers (for serving)
Salt and pepper, to taste
Instructions:
1. Preheat your oven to 400°F (200°C). Toss the sweet potato fries with olive oil and Herbes de Provence, then spread them on a baking sheet.
2. Bake the fries for 20 minutes. Flip and continue to bake for 10 more minutes. Once cooked, season with salt and pepper to taste.
3. Drizzle olive oil on both sides of the Portobello mushroom and season with salt. Grill for 10-15 minutes on each side until tender.
4. Toast the Ciabatta roll in the oven until it's lightly crisp.
5. Spread caramelized onions on the toasted Ciabatta roll. Add lettuce, grilled Portobello, seasoned tomato slices with a pinch of salt, and microgreens.
6. Serve the sandwich with the sweet potato fries and pickled cucumbers on the side.
