Ingredients:
1 ½ cups of dates, pitted
½ cup of mixed nuts (sunflower seeds, walnuts, pumpkin seeds, shaved almonds, pistachios)
1 tablespoon ground flax seeds
1 tablespoon chia seeds
1 teaspoon coconut oil
A small handful of dried cherries
Instructions:
1. If your dates are a bit dry, soak them in warm water for 5 minutes to soften them. Drain well. Then, place the dates in a food processor and blend until they form a smooth, sticky paste.
2. Using a mortar and pestle, lightly crush the mixed nuts to keep some texture and crunch. Alternatively, you can add the nuts directly to the food processor with the dates if you prefer a smoother texture.
3. In a large bowl, combine the date paste, crushed nuts, dried cherries, ground flax seeds, chia seeds, and coconut oil. Mix well until all the ingredients are evenly incorporated.
4. Using your hands, take small portions of the mixture and roll them into bite-sized balls.
5. Place the energy bites on a plate or tray, cover, and refrigerate for at least 30 minutes to firm up. Enjoy!
