Ingredients:
1 sweet potato, well-rinsed, dried, and poked with a fork
1/3 cup black beans, soaked overnight
1/3 cup brown rice, rinsed and drained
1/2 avocado
1 tablespoon finely minced mint
1/2 teaspoon black sesame seeds
1/2 tomato, diced
1/3 cup cooked corn
1 teaspoon olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions:
1. Preheat oven to 425°F (218°C). Bake the sweet potato for 50 minutes to an hour.
2. In a pot, bring the soaked beans to a boil and cook on medium-high heat for 40 minutes or until tender. 3. Toast the brown rice in a pot over high heat for 2-3 minutes, add 2 cups of water and cook on medium for 30 minutes. Let it cool.
4. Rinse the beans under cold water, drain, and add to a salad bowl along with the rice, tomato, corn, mint, and sesame seeds.
5. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl for the dressing.
6. Mix the dressing into the salad bowl.
7. Once the sweet potato is ready, open it and season with salt and pepper.
8. Top the sweet potato with the salad mixture and enjoy!
